Ready-to-Go Baked Oatmeal or Oatmeal Bars (GF/V)

Warm up for breakfast at home or cut into squares to take on the go -- Either way, this baked oatmeal recipe will jump start your day with protein, fiber, healthy fats and carbohydrates.
Recipe:
Standard Ingredients:
1 medium ripe banana
1 1/2 cups milk of choice (recommend almond or soy milk)
1-2 T of maple syrup
1 t vanilla extract
2 T of coconut oil melted (can sub with butter or ghee)
2 1/2 cups rolled oats
2 t baking powder
1 t cinnamon
1/4 t salt
Now Make it Your Own!
1-2 T of your choosing: chia seeds, flax seeds, hemp seeds, crushed walnuts (I use about 1 T of each)
2 T of your choosing: mini dark chocolate chips OR fruit (diced strawberries, blueberries, dried mango)
Mix in or Drizzle on top 1-2 T of your favorite nut butter!
Directions:
Preheat oven to 375 degrees
In large bowl, mash banana
Whisk in all Wet ingredients (milk, maple syrup, vanilla, coconut oil)
Add in all Dry ingredients (oats, baking powder, cinnamon, salt) and stir until combined
Add in the "Make it Your Own" ingredients and stir
Lightly spray or use parchment paper to line a cake/loaf pan
Bake for 36-40min until golden on top
Let cool
Enjoy!
Cut into squares and reheat in the morning (add a little yogurt on top for extra protein)
Cut into squares to pack for an on-the go breakfast or mid morning snack
